Caprese Salad

How is your tomato garden shaping up?  Have a few tomatoes on-the-vine just waiting to be picked and eaten?  This week you should incorporate your flavorful fruit into your dinner line-up or if you are attending a BBQ this weekend change-up the potato salad routine.  Use your home-grown tomatoes, or you locally grown tomato, to make a naturally gluten-free dish.  Pair with fresh mozzarella and basil to have an easy, yet tasteful, appetizer.  With three main ingredients and no cooking requirements this is simply perfect:

Caprese Salad:

  • 2-3 large tomatoes
  • 1 lb fresh mozzarella cheese
  • ~ 20 leaves of fresh basil
  • Olive oil
  • Salt & pepper
  1. Cut tomatoes and mozzarella to roughly 1/4 inch thick
  2. Layer a slice of tomato, mozzarella and basil life
  3. Drizzle with olive oil, and sprinkle with salt & pepper
  4. Mangia!
